Step:

  1. Pour the large amount of the oil into a deep bottomed frying pan, heat it on a gentle heat / medium. Once a piece of potato gently bubbles in the oil add the rest, the idea is confit the potato so we are not frying them, we are gently cooking them through in the oil it takes about 20 mins.

  2. In a seperate frying pan add the spices and garlic and heat to release the flavours once its heated through add the table spoon of flour then a dash of the warm stock to form a paste so it has no lumps in, then pour in the rest of the stock bit by bit stirring well, adding the salt so it becomes a smooth thickish sauce. Set aside.

  3. Check the potatoes have cooked with knife that they are soft in the middle, then lift out carefully and drain on to kitchen paper. Once the potatoes have drained the excess oils, place in a bowl and pour over the paprika mixture, garnish and serve! Enjoy


Ingredients

  1. 500 ml quality olive oil
  2. 2 large baking potatoes peeled and cubed
  3. 1 heaped tbsp of plain four
  4. 1 heaped tbsp hot smoked paprika / cayenne pepper
  5. 100 ml stock
  6. 1 tbsp salt
  7. 1 tbsp olive oil
  8. 1 diced garlic clove
  9. parsley and a wedge of lemon to garnish (optional)
