Wash moth /matki soak in enough water overnight or for minimum 8 hours. Drain and wash with water,drain all. Wet a clean cloth with water and squeeze the excess water from it. Take this samp cloth and keep the soaked moth beans in the cloth. Tighten this cloth and keep this cloth with the moth beans in it covered in a container for 1 or 2 days.
After one day, you will see small sprouts and they will grow after 2 days. After 2 days wash them well with water to avoid any odour.
Heat oil in the pressure cooker and add cumin seeds. When cumin start crackling add asafoetida,chopped green chilli, ginger and curry leaves.
Now add the sprouts and stir to mix well. Now add salt, turmeric powder, coriander powder, red chilli powder and dry mango powder mix well.Add 1/4 cup of water.
Close the cooker and pressure cook for 2 whistles on medium When the pressure cool down completely then open the cooker. Moth is ready.
Arrange papdi in a plate.place boiled potato pieces over it.also spread sprouts prepared and pour 3 tsp of tamarind chutney over the papdis.
Sprinkle chilli powder, chaat masala. add in thick whisked curd over papri.also sprinkle finely chopped onions,green chilli and tomatoes.once again spread moth,curd and tamarind chutney.
Sprouts moth papadi chaat is ready. serve papdi chaat immediately.
