Step:

  1. Take spinach with soft leaves
    Just remove the long stems if it has
    Dont chop the leaves as we want them whole
    Wash and dry the palak leaves and keep aside to drain the excess water

  2. In a mixing bowl, combine gram flour, rice flour, coriander powder, salt and Red chilli powder with 4 tablespoons of water to make a dropping consistency batter.
    When you get a thick lump free paste add soda bicarbonate and mix well again and set aside.

  3. In a kadai, heat oil on medium flame, dip each spinach/palak leaf in the gram flour batter and coat it completely gradually put them into the oil and deep fry until golden brown in colour.

  4. Drain them on an absorbent paper and plate it in a platter to make the chaat.

  5. To make the Palak Patta Chaat, arrange the fried palak pattas on a plate.

  6. Place a little bit of each item mentioned under garnish list in the ingredients

  7. One can plus- minus the chutneys as per own taste.

  8. Sprinkle some Chaat Masala on the top And garnish generously with Sev and coriander leaves and serve.


Ingredients

  1. 10-20 soft Spinach Leaves (washed and cleaned)
  2. as needed Oil for frying
  3. For making the batter
  4. 1/2 cup besan/gram flour
  5. 2-3 tbsp rice flour
  6. to taste Salt
  7. 1 tsp red chilli powder
  8. 1/2 tsp coriander powder
  9. 1 pinch soda bicarbonate
  10. as needed Water to make the batter
  11. For garnish
  12. 1/2 cup beaten Curd
  13. 1/4 cup Green Chutney (Coriander & Mint)
  14. 1/4 cup Sweet tamarind Chutney
  15. as needed Nylon sev
  16. 3-4 tbsp Pomegranate kernels
  17. as needed Chaat masala
