Step:

  1. In a small/medium nonstick saucepan, combine honey, water, and sugar. Place on low heat. You just want to begin the process of heating up the contents at this time. Stir the mix often for a 2 or 3 minutes.

  2. Once well mixed, and hot: Add lavender, herbs de Provence, thyme, and oregano. Continue over low heat for approximately 10-15 minutes. This period of time is where we extract the flavors of our herbs onto the honey. So, low heat, and a nice stretch of time does the trick. (Your really not looking for a reduction of the honey mixture at this point)

  3. Remove from heat, pour through strainer removing all herbs.(if small residual stuff remains its ok) Wash & dry the saucepan from earlier, return your honey mixture into the saucepan. Place on Lowest heat setting and add butter. Remain on heat until butter is thoroughly mixed into the honey. I prefer the consistency to be that of maple syrup.

  4. You will salt chicken thighs, rub with honey mixture, and cook. I use a rotisserie, and barbq for maximum results. Baste the chicken as you cook until you reach your desired honey coating.

  5. Let cool, and enjoy!

  1. 1 cup honey
  2. 1/2 tablespoon dried lavender flower
  3. 1/4 tablespoon herbs de Provence
  4. 1/2 tablespoon fresh thyme(fine dice)
  5. 1/2 tablespoon fresh oregano(fine dice)
  6. 2 tablespoons water
  7. 1/4 stick unsalted butter
  8. Kosher coarse salt
  9. White pepper/black pepper
  10. 8-10 deboned chicken thighs
