  2. Chop the peppers and onions into inch squares and thickly slice the courgettes and halve each round. Place on the roasting tin

  3. Drizzle the oil and balsamic over, then shake over the oregano, basil, garlic powder & sugar and season well with salt and pepper. Toss well to coat

  4. Roast for 35 minutes or until beginning to caramelise and turn golden

  9. 1 tsp dried oregano
  10. 1 tsp dried basil
  11. 1/2 tsp garlic powder
  12. to taste salt and pepper
