Step:

  1. Place all the herbs and spices in a bowl and mix well.

  2. Dip the fish fillet is in the spice mixture until lightly coated

  3. Heat 2 tablespoons of the butter in a large frying pan, add the peppers and fry for 4 to 5 minutes or until softened then remove the peppers and keep warm

  4. Add the remaining butter to the pan and heat until sizzling. Add the cod fillets and fry on a moderate heat for about 3 to 4 minutes on each side, until brown and cooked

  5. Transfer the fish to a warmed serving dish, surround with the peppers and garnish with time.

  6. Serve the spiced fish with some grilled tomatoes and sweet potato purée

  1. 1 teaspoon dried thyme
  2. 1 teaspoon dried Oregano
  3. 1 teaspoon ground black pepper
  4. 1/4 (or more) cayenne pepper
  5. 2 teaspoons paprika
  6. half teaspoon garlic salt
  7. 4 tail end pieces of cod fillet (about 175 g each)
  8. 75 g butter
  9. 1/2 red pepper sliced
  10. 1/2 green pepper sliced
  11. fresh thyme to garnish
