Step:

  1. Place the land into a bowl, then mix together the olive oil, a regular know, parsley, lemon juice and seasoning, then pour over the lamb and mix well cover and marinate for about an hour

  2. Preheat the grill to medium-high

  3. Thread the marinated lamb, eggplant, onions, tomatoes and they leaves alternately onto for large skewers

  4. Place the Kebabs on a grill rack and brush the vegetable deliberately with the leftover marinade

  5. Reduce the heat to medium, then cook the kebabs fret about 10 minutes on each side, basting once or twice with the juices that have collected on the bottom of the grill pan

  6. Serve the kebabs hot with hot pita bread and natural yoghurt

  7. You can serve these with a plain boiled rice preferably Basmati or Jasmine


Ingredients

  1. 450 g leg of lamb boned and cubed
  2. 5 tablespoons olive oil
  3. 1 tablespoon chopped fresh oregano or thyme
  4. 1 tablespoon chopped fresh parsley
  5. juice of half a lemon
  6. 1/2 small eggplant, thickly sliced and quartered
  7. 4 baby onions halved
  8. 2 tomatoes quartered
  9. 4 fresh bay leaves
  10. to taste salt and pepper
  11. pita bread and plain yoghurt to serve
