Clean and blanch the spinach. When it cools down, puree it and mix it with the Dosa batter.
Heat a tawa / griddle and drizzle 1 tsp. oil. Sprinkle some water. After it sizzles off, wipe clean with a paper towel or rub an onion over the surface of the tawa. This ensures a non-stick coating.
Pour a ladle of the batter and spread it in a circular motion into a round circle. Drizzle some oil around the edges and over it.
Lower the flame and cook on one side for 2 minutes or till it turns slightly brown.. Flip it over and cook the other side till light brown. Remove from the tawa and keep on a plate.
Each time a Dosa is made, rub the surface of the tawa with the cut onion. Make similar Dosas with the remaining batter. Serve them hot with coconut chutney and sambar for a delicious breakfast.
