Speck and cheese croquettes

Mix the speck and cheese into the cooled mashed potatoes. Add egg and some breadcrumbs, salt and pepper. Mix it up very well

Divide mixture into equal parts. Shape into croquettes and roll in extra breadcrumbs. Rest in fridge for half an hour (or even make the night before)

Fry in oil until golden brown. Drain on kitchen paper and serve with a nice salad and crusty bread :)
