Step:

  1. Post soaking, pressure cook the chickpeas until soft

  2. Blanch the spinach leaves for 2-3 minutes. Drain the water immediately and keep the leaves aside

  3. Add the cooked chickpeas, basil and spinach in a blender or food processor

  4. Add the tahini paste, salt,pepper, lemon zest and lemon juice

  5. Blend the ingredients until smooth

  6. Once done add the olive oil and blend for a few seconds

  7. Transfer the hummus in a serving bowl and garnish with cilantro and toasted sesame seeds

  8. Serve immediately as a dip or accompanied with the traditional pita or any breads of your choice

  9. Tip: add more basil if needed. I added a lesser quantity as it sometimes tends to overpower the flavours in a recipe

  1. 350 grams chickpeas soaked overnight
  2. 300 grams spinach leaves with tender shoots
  3. 1 tablespoon tahini paste
  4. to taste Salt
  5. Crushed black pepper to season
  6. 1 teaspoon lemon zest
  7. Juice of 1/2 a large lemon
  8. 1-2 teaspoons toasted white sesame seeds
  9. 5-6 chopped basil leaves
  10. 2 tablespoon olive oil
  11. 1 sprig cilantro/ coriander leaves
