Step:

  1. Wash and peel and grate the Lauki. Add 1 teaspoon Red Chilli Powder,Garam Masala,Saunf and 1 teaspoon salt, or according to taste. Take care to add the salt just before you start frying, otherwise the mixture will leave water.

  2. Mix all the ingredients well and shape them into small lemon sized dumplings. Heat the oil on medium heat and add the dumplings. Cook for 1 minute and then turn the heat to low and cook the dumplings till they are golden brown on both sides. Drain the excess oil and set the koftas aside.

  3. Heat oil in a pan and fry the Cumin Seeds and a pinch of Heeng. Make a paste of Garlic, Ginger, Green Chillies and Onions. Fry it in the oil till it turns golden brown or translucent.

  4. When cooked, add Red Chilli Powder, Garam Masala, Haldi and Salt. Mix well.

  5. Wash 2 tomatoes and make a smooth puree using a blender or food processor. Add this puree to the pan and cook till the raw tomato smell is gone.

  6. Add 1/2 Cup Malai or Cream to the gravy. You can also use milk.Simmer on low heat till cooked.

  7. Add the Koftas to the gravy and garnish with green chillies.Serve hot with roti/paratha or rice.

  7. as needed Oil for Frying
  8. For the Gravy
  9. 2 Onion
  10. 2 Tomato
  11. 2 Green Chilli
  12. 6-7 Cloves Garlic
  13. 1 inch Ginger
  14. 1/2 Cup Malai or Cream
  15. 1 Teaspoon Cumin seeds
  16. 1/2 Teaspoon Red Chilli Powder
  17. 1/2 Teaspoon Turmeric powder
  18. 1/4 Teaspoon Garam Masala
  19. 1 Pinch Heeng / Asaefoetida
  20. 1/2 Teaspoon Salt
  21. as needed Oil for frying
