Step:

  1. Mix the ground turkey with the vinegar, Worcestershire and dry spices together in a large bowl at least 2 hours before cooking.

  2. Preheat the oven to 385

  3. Cut the squashes in half and scoop out the seeds. Set on a lined baking sheet brush with oil and roast until soft, about an hour.

  4. In a saucepan warm your favorite pasta sauce homemade or store bought.

  5. In a large skillet heat 2 tbsp oil on medium high heat and add the ground turkey mix. Cook on medium high until done and continue to cook to allow the meat to brown a little bit. I have had the best luck with getting a good flavor and texture on ground turkey by cooking with a little higher heat.

  6. Mix the turkey, sauce and feta together.

  7. Scrape the inside of the squashes lightly with a fork and spoon the mixture inside.

  8. Sprinkle with mozzarella cheese and bake for about 10 minutes until golden and bubbly.

Ingredients

  1. 2 acorn squashes
  2. 1 lb. Ground Turkey
  3. 1/2 cup Feta cheese
  4. 1 jar pasta sauce
  5. 2 tbsp red wine vinegar
  6. 1 tsp Worcestershire sauce
  7. 1 tbsp Montreal seasoning
  8. 1 tbsp crushed red pepper flakes
  9. 1 tsp granulated garlic
  10. 1 tsp sage
  11. 1 tsp crushed fennel seed
  12. Mozzarella cheese
