Step:

  1. Cook chopped bacon until crispy and drain on a paper towel reserving 2 tbls of bacon grease

  2. Add reserved bacon grease, potatoes, and butter to medium pot. Cover potatoes with water. Cover with lid and cook on medium low heat for 1 hour.

  3. Add rest of incredients and simmer for 5 to 10 minutes.

  4. Stir and serve.

  1. 1 lb bacon chopped
  2. 1 1/2 cups shredded carrots
  3. 1 bunch green onions chopped
  4. 10 ounces goat cheese
  5. 1 cup sour cream
  6. 1 Tbsp butter
  7. 5 medium potatoes peeled and chopped
