Step:

  1. Boil the Arbi till soft (2-3 whistles in pressure cooker). Drain and peel the skin. Mash them well and mix with all the following ingredients except oil.

  2. Wet your palm and shape the mix into cutlets. Coat with the rice flour and chill for an hour in the refrigerator.

  3. Heat oil in a pan and deep fry the cutlets till golden brown on both sides. Drain on a kitchen towel.

  4. Serve them hot with any chutney or sauce.

Ingredients

  1. 10-12 pieces Arbi (med. size Colocasia)
  2. 2 tsp besan (gram flour)
  3. 2 tbsp rice flour
  4. 1 tbsp coriander leaves chopped
  5. 1 tsp ginger grated
  6. 1 onion chopped
  7. 2 green chillies chopped
  8. 1/2 tsp garam masala powder
  9. 1/4 tsp turmeric powder
  10. to taste salt
  11. 1 tsp red chilli powder
  12. 1 tsp kalonji (nigella seeds)
  13. 1/2 cup rice flour for coating
  14. as needed oil to deep fry
