Step:
Heat a pan,add two tsps of ghee. Take sooji in a pan on low-medium heat, roast it with stirring constantly till it starts to change it's colour slightly. make sure that it does not get burn. Add one tbsp of grated coconut. It adds flavour and taste.Roast on simmer. It took me ten minutes.
After roasting rava properly add half quantity of milk very slowly so that lumps shouldn’t be formed. Then add more milk by stirring constantly.
Now Immediately start mixing it. It will thin and pasty. Within a minute or two, it will starts to thicken up.
Keep stirring and cooking till it comes together like a dough. It will take only 5-6 minutes.Add fresh crushed mawa. Remove it to a plate. Let it cool down slightly.
In the meantime, grate coconut, mash mawa.Add chopped dry fruits, cardamom powder, sugar powder and tutti fruti.Mix well.Stuffing for modak is ready.
It should be hot or warm. Do not let it cool down for longer, otherwise you won’t get the smooth dough. Keep kneading till you get smooth and non sticky dough. If you feel too hot, then you can dip your hand in the water and continue kneading process.
Take small dough and shape into small circle. Using your finger, press it tightly and make hollow center. Fill the center using the stuffing mixture.
Now grease your hands and shape the stuffed round ball into a modak.I have prepared modaks without moulds. Now with the help of a fork make cuts to form a proper modak shape.
Garnish the cut area of modak with tutti fruti.
Offer these rawa mawa modaks to Lord Ganpatti and seek their blessings.
