Step:
Add salt and oil in maida.Pour water to knead the dough. Knead the dough for 3-4 minutes until it becomes soft. Cover the dough and keep for 20 minutes so that it gets fermented.
Meanwhile prepare stuffing for the potlis.
Preheat a pan with 1 tsp ghee.Add roasted urad Dal,grated coconut,chopped dry fruits.Roast for two minutes.Add raisins and mix well.Add salt and spices.Allow the mixture to get cold.
Knead the dough more to make it softer. Make small balls out of the dough. 8-10 balls can be prepared with this much quantity of dough.
Cover the balls with cloth so that they don’t get dried up. Take one ball and roll it. Make sure it doesn’t become much thin. Take the puri in your hand and place 1-1.5 tsp prepared stuffing in the center. Apply little water at the corners of the puri and give it a shape of potli. Seal from all sides very carefully.
Take a pan to heat oil. Place 2-3 Potlis or as many as possible at a time and fry them on medium flame till they get golden brown colour. Take out the fried Potlis in a plate. Like wise prepare and fry all Potlis.Thesesalty and spicy Potlis can be preserved for about a week or more.
Serve with any Chutney,sauce or dips.Enjoy the festive season with unique savouries.

1 cup Maida (all purpose flour)
1/4 tsp Salt
2-2.5 tbsp ghee
as needed Oil for fry
For stuffing
20-25 Cashew nuts (Finely chopped)
1/2 Cup roasted urad Dal
20 Almonds(Finely chopped)
1/2 cup Grated coconut
2 tbsp Raisins
to taste Salt
1/2 tsp Mango powder
1/4 tsp Red chillies powder
