Step:
Beat the margarine and syrup together well, it may look like it's curdling but don't worry
Mix in half of the icing sugar and 1 tsp of the peppermint flavouring. Taste and add more flavouring to your desired strength
Mix in half of the remaining icing sugar and sprinkle the rest over your work surface
Knead the dough until the sugar is completely incorporated and smooth. The dough shouldn't be sticky so add extra icing sugar as required
At this point you can add some food gel colouring if you like. It might be nice to colour half of the dough a pale mint green
Shape the dough into small balls and flatten down with a fork
Place on a tray lined with parchment paper and let stand uncovered at room temperature for 24 hours to dry
Ingredients
65 g Stork margarine (gold foil-wrapped block),softened(1/4 cup)
80 mls light corn syrup or golden syrup (1/3 cup)
500 g icing sugar / powdered sugar (4 cups)
2 tsp peppermint extract or as required
