Step:

  1. Slowly render fat from bacon on low heat. When bacon is crispy, remove from pan with a slotted spoon and set aside for garnish or another use.

  2. Turn up heat to high. Add pork tenderloin. Season with dry rub and a pinch of salt.

  3. When first side of pork is browned, add onions and peppers. Stir. Cook 2 minutes. Add garlic and tomatoes. Stir. Cook 1 minute.

  4. Add salsa. Cook for 1 minute.

  5. Variations; Fresh tomatoes, beans, cream, other salsa, sofrito, beer, thyme, bourbon, tequila, adobo, mojo, poblano, celery, habanero, serrano, lime, pineapple, mango, papaya, vinegar, corn, zucchini, avocado, cotija, chihuahua, queso fresco, coconut milk, cilantro, coriander seed, cumin, chile powder, lemon, paprika, smoked paprika, ground jalapeƱo powder, crema, nopales, chimichurri, tamarind, sherry,

  1. 1 pork tenderloin; trimmed & cubed
  2. 1/4 C "Blue Moon Dry Rub" ( see my recipes )
  3. 6 slices bacon; small dice
  4. 2 cloves garlic; minced
  5. 1/2 red onion; julienne
  6. 1/2 red bell pepper; julienne
  7. 14 1/2 oz diced tomatoes
  8. 3 1/2 oz San Marcos chipotle salsa
  9. 1 large pinch kosher salt
