Step:

  1. In medium bowl, stir together soy sauce, sugar, red pepper, and half of the green onions. Set aside. (This can be made earlier and refrigerated)

  2. In a large skillet, heat the olive oil over medium-high heat. Add garlic and ginger and cook about 30 seconds. Add pork and stir to break apart. Press flat in bottom of skillet and let cook undisturbed for about 4 minutes. When bottom of meat is browned, break up the meat and add the soy sauce mixture. Cook and stir until meat is browned and crumbly, about 3 minutes.

  3. Remove from skillet. Top with cucumber, mint, and remaining green onions. Serve over rice (I use cauliflower rice) or wrap into warmed tortillas.

Ingredients

  1. 6 green onions finely chopped
  2. 3 tbsp soy sauce
  3. 2 tsp packed brown sugar
  4. 1 garlic clove minced
  5. 1 tbsp fresh ginger minced
  6. 1 lb ground pork
  7. 1 medium cucumber chopped
  8. 1/2 cup fresh mint leaves
  9. 1/4 teaspoon crushed red pepper
  10. 1 tbsp olive oil
