Hedgehog Potatoes

Wash Potatoes. Then slice thinly, NOT all the way through, about 0.5cm apart, then do the same in other direction, so the potato looks like upright matchsticks.

Spray lightly with oil spray and place in an oven tray.

Cook for about 30-40 minutes, depending on the size in a Hot oven or 15 minutes in an air- fryer.
