Step:

  1. Mix all of the lobster ingredients in a mixing bowl. Chill for 1 hour.

  2. Split the belillo roll. Toast if desired. Spread creme friach on roll. Top with lobster and shredded cheese. Squeeze lemon wedge over top. Serve immediately. Enjoy.

  1. 1 (3 lb) lobster, deshell, and Chop into bite sized pieces
  2. 1 shallot, minced
  3. 2 celery stalks, cut down middle lengthwise then slice thin
  4. Juice of half a lemon
  5. 1 tsp minced garlic
  6. 3-4 tbs mayonnaise
  7. 1/2 tsp white pepper and old bay seasoning
  8. 1/4 cup chopped fresh dill
  9. Garnish
  10. Belillo rolls
  11. Shredded merlot belvitano cheese
  12. Lemon wedge
  13. Creme friach
