Step:

  1. heat oven to 375. Place paper baking cup in each of 25 regular size muffin cups.

  2. in large bowl best cake mix, oil, water, 1 tsp. rum extract, pineapple, and eggs with electric mixer on low speed 30 seconds.

  3. beat on medium speed 2 minutes scraping bowl occasionally. Divide batter evenly among muffin cups

  4. bake 14 to 19 minutes. Cool 10 minutes, remove from pan to cooling rack.

  5. cool completely about 30 minutes

  6. stir coconut extract and 1 tsp. rum extract into frosting

  7. spread frosting on cupcakes . dip tops of frosted cupcakes in coconut. store loosely covered at room temperature

  1. 1 box yellow cake mix with pudding
  2. 1/3 cup vegetable oil
  3. 1/4 cup water
  4. 1 tsp rum extract
  5. 1 can of 8 oz. crushed pineapple in juice, undrained
  6. 3 eggs
  7. 1 tsp coconut extract
  8. 1 tsp rum extract
  9. 1 container of 12 oz. whipped vanilla ready to spread frosting
  10. 3/4 cup shredded coconut
