Step:

  1. Heat oil in a pan and saute the boiled potatoes till light brown. Keep aside.

  2. Heat remaining oil and temper with panch phoron and asafoetida.

  3. Add onion, ginger, garlic and green chilies. Saute till light brown.

  4. Add the chopped methi leaves, salt, turmeric powder, red chilli powder, coriander powder and cumin powder. Fry on low flame till dry.

  5. Add the fried potatoes, followed by the.............. garam masala powder. Combine well and fry for a minute.

  6. Serve as a side dish with chapattis or roti.

Ingredients

  1. 2 potatoes, boiled & cubed
  2. 3-4 bunches, fenugreek leaves, cleaned, washed & chopped finely
  3. 2-3 tbsp.mustard oil
  4. 1 tsp panch phoron (equal quantities of fennel, fenugreek, mustard, cumin & nigella seeds)
  5. 1/4 tsp asafoetida
  6. 1 onion, chopped
  7. 1 tsp garlic, chopped
  8. 1 tsp ginger, chopped
  9. 2 green chilies, chopped
  10. to taste salt
  11. 1/2 tsp turmeric powder
  12. 1 tsp dry roasted coriander powder
  13. 1 tsp dry roasted cumin powder
  14. 1 tsp red chilli powder
  15. 1/2 tsp garam masala powder
