Step:

  1. Heat a pan of oil about 2 inches, and bring it up to around 325/340

  2. Cut haddock into bite size pieces, pat dry with kitchen paper.

  3. Mix flour, cornstarch, baking powder, baking soda, salt n pepper and cold water to make a smooth batter.

  4. Add haddock pieces to the batter and carefully put into heated oil around 5-6 pieces at a time so the oil doesn't cool down to much. If this happens the batter will be soggy. Fry for 4-5 minutes or until golden brown and crispy.

  5. Remove and drain well on kitchen paper, sprinkle immediately with chili salt on a warmed plate, continue until all of the fish is cooked and dig in

  6. This batter can be used with cod, catfish, tilapia and onion rings


Ingredients

  1. 1 cup all-purpose flour
  2. 2 tbsp cornstarch
  3. 1/2 tsp baking powder
  4. 1/2 tsp baking soda
  5. 1/2 cup water for flour (ice cold water gives a better batter)
  6. 2 lb fresh haddock cubed
  7. Cracked chilli sea salt or plain sea salt
  8. 2 inches of vegtable oil for frying
