Step:

  1. Wash sweet potatoes and boil until tender in their jackets.

  2. Remove peelings and mash thoroughly.

  3. Separate 2 eggs and beat egg whites until stiff.

  4. Mix egg yolks in with mashed potatoes.

  5. Add in the following ingredients to the potatoes and mix thoroughly.

  6. Fold in stiff egg whites to mixture and mix thoroughly.

  7. Pour potato mixture into baking dish and top with marshmallows.

  8. Bake at 350°F until marshmallows are brown.

Ingredients

  1. 4 sweet potatoes (2-2 1\2 cups of cooked potatoes)
  2. 2 large eggs
  3. 1/4 cup brown sugar
  4. 1/2 cup sugar
  5. 1/4 tsp allspice
  6. 1 tsp cinnamon
  7. 2 tsp vanilla
  8. 1/2 bag marshmallows
  9. 1/2 stick butter
  10. 1/4 tsp. salt
