Step:
Melt the butter in a large skillet and add onions, garlic, herbs, sugar, and salt. Cook on medium heat until onions have caramelized, about 20 MINUTES OR SO.
Reduce heat to medium low and add flour. Cook, stirring frequently, about 10 minutes.
Add stock, Stir well, and simmer an additional. 10 minutes.
To serve: place a crouton each on the bottom of large ramekins. Ladle soup to almost fill. Top with cheese and broil 3 to 5 minutes until cheese is golden and bubbly.

1/4 cup butter
3 cup yellow onions, thinly sliced
1 clove garlic, minced
1 tbsp sugar
1 1/2 tsp salt
1/2 tsp dried thyme
1 bay leaf (optional)
1 quart beef stock
2 tbsp flour (heaping)
1/4 cup dry Italian vermouth
1 croutons (sliced stale baguette)
1/2 cup grated gruyere
