Step:

  1. peel quarter length wise seed out dice as apples..12-14 inch zucchini..about 2 1/2cups

  2. cook zucchini in lemon juice for 10 minutes

  3. mix sugar, nutmeg, cinnamon and flour

  4. pour into sauce pan with zucchini

  5. cook until zucchini is transluscents

  6. bake in pie shell at 350 with topping until brown

  7. topping can be a pie shell like an apple pie or optional topping listed

  8. Blend optional topping ingredients until creamy

  9. put topping on pie and bake until brown

Ingredients

  1. 2 1/2 cup zucchini
  2. 2/3 cup lemon juice
  3. 1 1/2 cup sugar
  4. 1/4 tsp nutmeg
  5. 1/2 tsp cinnamon
  6. 1 1/2 tbsp flour
  7. Optional Topping
  8. 1/2 cup brown sugar
  9. 1/2 cup sugar
  10. 1/2 cup butter
  11. 1 cup flour
  12. 1/2 cup nuts
