Mock Apple-Zucchini Pie

peel quarter length wise seed out dice as apples..12-14 inch zucchini..about 2 1/2cups

cook zucchini in lemon juice for 10 minutes

mix sugar, nutmeg, cinnamon and flour

pour into sauce pan with zucchini

cook until zucchini is transluscents

bake in pie shell at 350 with topping until brown

topping can be a pie shell like an apple pie or optional topping listed

Blend optional topping ingredients until creamy

put topping on pie and bake until brown
