Step:

  1. Combine water, suar and cream of tartar, and bring to a boil.

  2. Drop in Ritz crackers whole and keep boiling 5 minutes.

  3. Pour mixture into pie shell; sprinkle with lemon juice and cinnamon.

  4. Combine ingredients for Crumb Topping; sprinkle over pie.

  5. Bake at 400°F for 15 min., then reduce heat to 350°F and continue baking for 15 - 20 min. longer.

  6. Serve warm.

Ingredients

  1. 500 ml water
  2. 250 ml sugar
  3. 10 ml cream of tartar
  4. 30 Ritz crackers
  5. 1 unbaked 1 L pie shell
  6. 15 ml lemon juice
  7. 2 ml cinnamon
  8. 1 CRUMB TOPPING
  9. 250 ml finely-rolled Ritz cracker crumbs (about 30 crackers)
  10. 125 ml lightly-packed brown sugar
  11. 2 ml cinnamon
  12. 75 ml melted butter or margarine
