Step:

  1. Pour broth and 1 cup water into a 2-3 quart saucepan, add wild and brown rice. Bring to a boil over medium high heat. Cover, reduce heat to low and simmer about 50 minutes or until rice is done.

  2. Meanwhile, heat olive oil in large skillet over medium.high heat about 3 mi utes. Add celery and shallots, cook 2-3 minutes. Stir in walnuts, apricots, raisins and/or cranberries. stir and cook 3-4 minutes.

  3. Fluff rice with a fork when done and toss with fruit-nut mixture. Season to taste with salt and pepper. Serve while hot.

  2. 1 cup Brown rice (with 50 minute cook time)
  3. 1 packages (32 ounces) chicken stock
  4. 2 tbsp olive oil
  5. 1 cup celery, finely chopped
  6. 1/4 cup shallots, finely chopped
  7. 1 cup walnuts, chopped
  8. 1 cup dried apricots, coarsely chopped
  9. 1/4 cup golden raisins or dried cranberries
