Step:

  1. Microwave jaggery using 3 tbsn milk or heating it in a pan. let cool

  2. Combine milk and vinegar in a bowl and keep aside

  3. In another bowl, beat the egg and oil together.

  4. Pour in the milk- vinegar, vanilla Essence and jaggery paste. whisk well

  5. Seive in the flour, baking soda, baking powder & dry fruits

  6. Combine well to form a thick batter and pour it in a greased baking tin/bread loaf pan

  7. Bake for 30 minutes at 180 degree celcius or till done

  8. Tips: Use powdered jaggery for quick and ease in dissolving it. Date palm jaggery tastes the best, however you may use any variety

  9. Tip: keeping this cake healthy, avoid icing/frosting of any kind

  10. Tip: For kids, check allergic reactions to nuts/ dry fruits and use accordingly

  11. Tip: If you are fine with brown coloured porridge/desserts, jaggery can be an excellent alternative for sugar and can be used for kids, diabetic and for those watching their weight!

  12. Tip: This is a good sugar free tea time cake too


Ingredients

  1. 1.5 cups Whole Wheat Flour
  2. 1 cup Date palm/any jaggery
  3. milk for dissolving jaggery 3 tbsn
  4. 1 cup milk for batter
  5. vinegar 1 tbsn
  6. vanilla essence 1 tsn
  7. 2 eggs
  8. olive oil 3/4th cup
  9. baking powder 1 tsn
  10. baking soda 1/2 tsn
  11. dry fruits powdered 1/2 cup(optional)
