Step:

  1. Cover potatos with salted water bring to a boil and cook until tender then cool. This can be done a day or two in advance, keep chilled.

  2. Preheat oven to 460.

  3. Line a baking sheet with parchment paper or foil and spray with non stick spray

  4. In a bowl combine olive oil with garlic, seasonings and cheese, whisk to combine

  5. Place potatos on prepared baking pan, gently, using the palm of your hand crush potatoes to about 1/4 inche thick trying to keep potato intact, if it breaks apart just push it together

  6. Brush each potato top generously with olive oil mixture.

  7. Bake 30 to 45 minutes depending on potato size until golden and crispy.

  8. Mix the sour cream with the chives and serve with hot potatos

  9. This potato dish is good as a side dish but makes a good appetizer as well!!

  1. 8 small red potatoes
  2. 1/4 cup olive oil
  3. 2 clove garlic, minced
  4. 1/2 tsp cajun seasoning
  5. 1/4 tsp black peppet
  6. 1 pinch salt
  7. 2 tbsp grated parmesan cheese
  8. 1 FOR DIP
  9. 1 tbsp chopped chives
  10. 1/2 cup sour cream
