Preheat oven to 450°F. Spray nonstick baking sheet with cooking spray. Set aside.
In large bowl, mix together 2 cups flour, baking powder, baking soda, salt, & xanthum gum. Add butter & mix until coarse crumbs form. Stir in buttermilk until a soft dough forms. For gluten-free, you may have to add up to another 3/4 cups of flour to reach desired consistency depending on the flour.
Drop spoonfuls of dough onto baking sheet. You can roll them out & use a cookie cutter the make round ones if you want, but I prefer not to, since it is less messy & easier to just drop spoonfuls on cookie sheets.
Combine egg whites & water. Brush over tops of biscuits. Bake until golden, about 12-15 minutes.

2 3/4 cup gluten-free all purpose flour (or 2 cups regular flour)
1 tbsp baking powder
1 tsp baking soda
1/2 tsp xanthum gum ( if using regular flour, you don't need this ingredient)
1/2 tsp salt
1/3 cup butter
1 cup buttermilk (if don't have Buttermilk or need a dairy free option, put 1 tbsp vinegar or lemon juice in 1 cup measuring cup & add enough milk of your choice to make 1 cup, stir, & let set for 5 min, then it's ready to use. may have to stir after sitting)
