Step:
Melt the butter in a large skillet over medium heat.
Add the frozen potatoes, and cook, stirring, until the onions brown slightly, 2 to 3 minutes.
Add the turkey or chicken, chicken broth, and garlic.
Stir to combine.
Season with salt and cayenne pepper or hot pepper sauce to taste.
Let the hash simmer, stirring occasionally, until all of the liquid is absorbed, 10 to 15 minutes.
Taste the hash and add more salt and/or cayenne if needed.
Serve immediately.
*if you ate using canned chicken broth that is not low in sodium, don't add any salt to this recipe.*
Ingredients
2 tbsp butter
2 cup finely chopped roast turkey or chicken
1 salt to taste
1 cayenne pepper or hot pepper sauce to taste
1 1/2 cup low sodium chicken broth (from one 14 to 14.5 ounce can)
1 half of a 28 ounce bag of frozen diced potatoes with onions and bell peppers (Mom used and I also use Ore-Ida Potatoes O'Brien)
