Step:

  1. MAKE CAKE

  2. Preheat oven to 350. Grease two 9 inche cake pans.

  3. Add the 3 tablespoons shredded coconut to the coconut milk and set aside to soak

  4. Separate egg whites into a medium bowl and egg yolks into a large bowl

  5. Beat egg whites with an electric mixer until stiff, set aside

  6. To the egg yolks add the sugar,salt and melted butter, beat until smooth.

  7. Stir the baking powder into the flour than add this, and the coconut milk with the shredded, coconut milk to the egg yolk mixture, beat until well combined. Fold the egg whites into the egg yolk batter until combined.

  8. Pour batter into prepared pans and bake abput30 to 40 minutes until a toothpick comes out clean cool before frosting

  9. FOR COCONUT BUTTER CREAM FROSTING

  10. Beat butter with an electric mixer until fluffy add sugar and coconut milk and vanilla beat until light and fluffy adding more coconut milk if dry, more sugar if wet.

  11. FROST COOLED CAKE WITH FROSTING

  12. Cover cake with plain sweetened coconut.

  13. MAKE COLORED COCONUT

  14. In 4 small bowls add 1 tablesppn water add drops of food color to each bowl, one drop is enough for primary colors add more to darken or change colors. Add 1 cup coconut to each bowl of color and mix well. Turn out on to plate to dry a bit. Decorate cake with colored coconut.

  2. 1 FOR THE COCONUT CAKE
  3. 6 large eggs
  4. 1 1/2 cup coconut milk
  5. 3 tbsp sjredded sweetened coconut
  6. 1 cup melted butter
  7. 1 cup granulated sugar
  8. 1 tsp 1/8 salt
  9. 2 cup all-purpose flour
  10. 4 tsp baking powder
  11. COCONUT BUTTERCREAM FROSTING
  12. 8 oz unsalted butter, at room temperature ( 2 sticks )
  13. 4 cup confectioners sugar
  14. 1 1/2 tsp vanilla extract
  15. 1/4 cup coconut milk
  16. COCONUT TOPPING
  17. 6 cup shredded sweetened coconut
  18. food coloring, as many or little colors as wanted. I used four colors for this cake as explained in direction step #14
