  11. 5 lb ground beef chuck ( medium grind )
  12. 1 1/2 tbsp sea salt
  13. 2 cup grated parmesan cheese
  14. 1 1/2 tbsp black pepper
  15. 1 tbsp basil
  16. 1 tbsp oregano
  17. 3 tsp mustard seed
  18. 8 clove garlic (pressed )
  19. 1 small onion (grated)
  20. 1 1/2 cup red wine
