Step:

  1. fry the Bacon and reserve the drippings...

  2. wash the tomatoes and place in colander to dry.

  3. put tomatoes in mixing bowl and pour 1/2 the oil on them. add salt, pepper, Basil, & garlic

  4. mix tomatoes and spices by hand....put tomatoes in a shallow casserole dish.

  5. put in the oven and bake at 350° for about 20 minutes ...

  6. use 1/2 the oil and heat in a skillet. add 1/2 tsp minced garlic, red pepper flakes, & onion. in the skillet on Med heat.. once onion seem semi soft add rinsed canned beans.. stir until they are starting to become tan colored.

  7. place beans in mixing bowl, add roasted tomatoes, add 1/3 cup shredded parmesan cheese.

  8. mix well... sprinkle with crumbled Bacon.


Ingredients

  1. 25 cherry tomatoes
  2. 3 tsp minced garlic
  3. 1 tbsp parsley
  4. 1 can great northern or navy beans, rinsed
  5. 2 dash salt and pepper
  6. 6 slice thick bacon fried, reserve drippings and crumble bacon and sit aside
  7. 1 small onion minced
  8. 1/4 tsp red pepper flakes
  9. 4 tbsp olive oil or bacon drippings, divided in half
  10. 1 packages parmesan cheese, only needs 1/3 cup
