Step:

  1. First, prepare the syrupplace the water, sugar, orange and cinnamon sticks in a pot.

  2. Place over heat, let it boil for 1 minute then remove it.

  3. Add the honey and set it aside to cool.

  4. Then, prepare the melomakarona. Using a deep bowl place all the liquids together with the butter.

  5. Add the icing sugar and all the spices.

  6. Mix by hand and add all the flour. Continue mixing using your hand from the center outwards so that the dough stays fluffy (you don't need to mix it too much because it will get firm).

  7. Form your melomakarona into small oval cookies and press them over a grater or sieve so that you make them look nice.

  8. Place them on greaseproof paper and bake in a preheated oven at  180οC for about 30 minutes until they get golden brown.

  9. As soon as you take them out of the oven dip them in the cold syrup. Using a ladle roll them in the syrup for about 1 minute. Then, take them out and let them strain.

  10. Place a little bit of honey and coarsely ground walnuts on a platter. Then a layer of melomakarona and repeat the same process several times.
