Step:
Dissolve the yeast in the lukewarm water and add the rest of the ingredients. Mix well until you have a runny dough with no lumps. Place it in a warm place to rise.
Take pieces of the dough using your hand, or a spoon that you dip into the oil, in small balls and drop them in plenty of very hot oil. Strain them, drizzle with syrup and then cinnamon and serve.
Place the water with the sugar, the peel and the lemon juice over heat for 6-12'.
Add the honey and remove from heat.

640 g flour
640 ml lukewarm water or 500 ml water + 2 eggs
1/2 tsp salt

16-18 g brewer's yeast
oil for frying
1 little cinnamon
Syrup
640 g sugar
320 ml water
1-2 tbsp honey
a few drops of lemon juice
1 lemon peel
