Step:
Drumsticks - a whole packet of frozen drumstick (fresh is better, but it wasn't sold here)
Freshly chopped Coriander leaves for garnish
2 tbsp of coconut milk
Tbsps of Sesame Oil
Add the mustard seeds to some heated sesame oil. When the mustard seeds start sputtering, add the fenugreek, onion, garlic, curry leaves and the green chillies
After a couple of minutes, add the drumsticks. Saute for a few minutes and add the spice powders: turmeric, chillie and coriander powder. Give it a good stir and allow it to cook and let the spices cook and become fragrant
Next add the tomatoes, and about 1/2 cup of water and let it cook. Once the drumsticks have cooked, add the tamarind juice
Season with salt if needed, and reduce the heat to low. Add the coconut milk, the cumin powder, mix and remove from the heat. Garnish with some coriander leaves
Serve this along with some freshly made white rice
