Step:

  1. Heat the olive oil in a pan and cook the red curry paste and the grated ginger together

  2. Give it a couple of minutes to get aromatic

  3. Next in goes the uncooked quinoa

  4. Give it a good mix with the curry paste

  5. Add the coconut milk and the vegetable stock and bring it to a boil

  6. Reduce the heat to low and add all your favourite veggies

  7. After 30mins, the quinoa and the veggies should be well cooked

  8. Add the 2 tsps of fish sauce and serve!

  1. 1/3 cup Quinoa : , uncooked , rinsed and drained
  2. 1 tbsp Red Curry Paste :
  3. 1/2 inch Ginger : piece grated
  4. 1/2 cup Coconut milk :
  5. 2/3 cup Vegetable stock :
  6. veggies carrots zucchini cauliflower beans peas Mixed : , , capiscum , , ,
  7. Olive Oil
  8. 2 tsps Fish Sauce :
