Preheat the oven to 180C / 350F. Grease four round cake pans. If you don't have four, you can use the same one for the four layers, as we will bake them individually
First step, make the cake batter just like you would have made cake batters before. Mix the the liquid ingredients first and then add in the flour. Once you have the cake batter ready, divide it equally into four bowls
The first cake pan will be plain vanilla, so you can set that aside. The next one will have a drop or two max of the purple food colouring, mix that well and side side. The third one, a couple more drop of the purple colour and the final one has got to be a nice deep purple
Bake each layer for about 20ish minutes or until a tooth pick comes out clean. Once out of the oven, give it 5mins, and then move the cake onto a wire rack to cool completely
While the cake was baking, I got the icing ready. Combine the ingredients listed above - you might want to add more or less. Mix well until the icing is pale and fluffy
Once the four layers of cakes are baked and cooled completely. It's Time to assemble the cake: The bottom was the deep purple layer. Add a bit of the icing, or you can add some berry jam - I went with the icing. Continue to stack the layers and don't forget the icing between each layer
Crumb coat the cake once layered and stick it in the fridge for 15mins. Take it out and fully frost the cake, and decorate with sprinkles or blue berries or anything really that you like
I put the cake back in the fridge, and took it out a few minutes before serving
