Step:

  1. Heat the oil in a pan, and add the onion and garlic and saute for a few mins

  2. Next add the squash and cook on medium low heat until the squash is lightly browned

  3. And almost tender. This took me around 7-10mins

  4. Add the chopped kale, lemon zest and juice. Season with salt and pepper and continue to

  5. Cook till the squash has cooked through and the kale has wilted

  6. Once done, transfer to a serving bowl and add the cranberries and nuts and toss to combine

  7. Sprinkle with the crumbled feta... SERVE!
