Step:

  1. Start by draining as much excess water from the cucumber as you can. I pressed mine between a couple paper towels.

  2. In a small bowl, combine the yogurt, cucumber, garlic, dill weed, lemon juice, salt and pepper.

  3. Refrigerate for an hour or so before serving. Store any remaining tzatziki in the fridge, tightly covered, for 3-4 days.


Ingredients

  1. 1 cup plain Greek yogurt
  2. 1/2 cup english cucumber, very finely diced
  3. 1 small clove garlic, grated
  4. 1 1/2 tsp. dried dill weed (could also use chopped fresh)
  5. 1 tbsp. fresh lemon juice
  6. to taste salt and pepper
