Step:
Heat 3 Tbsp of Cooking Oil in a wok until hot. Add the Sambal paste, Tamarind juice, sugar, (bitter beans too) and cook them until the oil separates.
When the oil separates, season with salt if needed and add the shrimp. Cook for 1-2 minutes (or until tender) and turn off the heat. Serve with coconut cream rice.
Ingredients
150 g Shrimp
Sambal Paste (process in a blender);
60 g Shallots
30 g Dried Chilli (deseed, rehydrate)
20 g Ginger
20 g Garlic
20 g Fermented Shrimp Paste (Belacan)
For Frying;
3 Tbsp Cooking Oil
1/4 cup Tamarind Juice
2 tsp Sugar
as needed Salt
