Step:

  1. Blend the toasted peanuts, shallots, garlic, ginger, chillies, blender until smooth. Alternatively the toasted peanuts can be grounded coarsely and mixed with the blended paste.

  2. In a pot add the cooking oil and heat it until hot. Fry the blended paste until the oil separates.

  3. Add the coconut milk, palm sugar, salt, lemongrass, tamarind slices, lime juice and mix well. Cook until the sauce thickens. Serve with satay and rice cakes.

  4. NOTE; Toasting Peanuts - In a pan, just add peanuts and heat it until it turns color. Careful not to burn them. Use your sense of smell as a guide.

  1. 150 g Peanuts (toasted)
  2. 1/3 cup Palm Sugar
  3. 40 g Shallots
  4. 20 g Garlic
  5. 20 g Ginger
  6. 1/2 cup water
  7. 10 pc Dried Chillies (rehydrate, deseeded)
  8. 1 cup Coconut Milk
  9. 2 pc Tamarind Slice
  10. 1 stick Lemongrass
  11. 2 Tbsp Lime Juice (optional)
  12. 3 Tbsp Cooking Oil
