Ingredients

  1. 1.5 pounds skirt or flap steak
  2. 1/4 of an onion, cut into 1/4-inch strips
  3. 1 Tablespoon minced garlic (or 1 teaspoon garlic powder, not garlic salt)
  4. 2 Tablespoons lime or lemon juice
  5. 1-1 +1/4 teaspoons kosher salt
  6. 1/2 teaspoon sugar
  7. 1/4 teaspoon black pepper
  8. 1/2-1 teaspoon cumin
  9. 1 teaspoon ground achiote (aka annatto) for color and earthiness (paprika will work in a pinch)
  10. 1/2 teaspoon chipotle powder for smoky heat
  11. 3-4 Tablespoons chopped cilantro (this is a great use for the stems)
  12. 1 Tablespoon oil
