Step:

  1. Peel & core apple. Cut the apple into 8 pieces.

  2. Combine apple pieces, cranberries, & mint in food processor. Pulse until finely chopped.

  3. In a large bowl combine brown sugar, orange marmalade, lemon juice, & dijon mustard. Stir until well blended.

  4. Add cranberry mixture to marmalade mixture. Stir until well blended. Stress in raisins.

  5. Store relish in tightly covered container in refrigerator.

  6. While relish is in fridge, put olive oil in skillet over medium high heat. Put salt & pepper on both sides of pork chops. Put in skillet several minutes on each side until done. Do in batches until desired number of pork chops are finished. Then serve with relish on top of pork chop.

  7. Note: there is enough relish for about 8-10 pork chops.

  2. 12 oz fresh, frozen, or dried cranberries, thawed
  3. 1/2 cup fresh mint leaves
  4. 1/3 cup firmly packed brown sugar
  5. 1/3 cup orange marmalade
  6. 1 tbsp lemon juice
  7. 1 tbsp dijon mustard
  8. 1/3 cup raisins
  9. pork chops
  10. salt
  11. pepper
  12. 2 tbsp olive oil
