Step:

  2. Heat Dashi Stock, Sugar, Mirin and Soy Sauce in a frypan or a large sauce pan over a medium heat, add Onion and Ginger.

  3. When it’s started boiling, add thinly sliced Beef and cook for 10 to 15 minutes.

  4. Make some room to add Harusame Noodles into the sauce, and cook until the noodles become soft and transparent.

  5. Half fill a bwol with freshly cooked rice and cover it with the Beef mixture. Serve with Pickle Ginger if you like.

  1. Cooked Rice 4 servings
  2. 400-500 g Thinly Sliced Beef
  3. 1-2 Onion
  4. 1 small piece Ginger *sliced into thin strips
  5. 50-100 g Harusame (dry thin noodles made from potato or mung bean starch)
  6. 1 cup Dashi Stock
  7. 2 tablespoons Sugar
  8. 4-5 tablespoons Soy Sauce
  9. 2-3 tablespoons Mirin
  10. Pickled Ginger *optional
