Rinse the cranberries and bring them to the boil with the cider and the onion. Cook on low heat for about 10 minutes until they burst and soften. Whizz the mixture in a blender and pour back into the pan - or best use one of the handheld blenders if you have one.
Add the remaining ingredients and bring everything to the boil again. Simmer on very low heat for 30 minutes until it thickens. Check the texture - bits of cranberries’ skin are visible, push the ketchup through a sieve.
Let it cool down and pour it to a tightly closable container. It will keep in the fridge for a week easily. before serving bring the ketchup to room temperature.
